The sweet apple and tangy feta flavors bring out the best in this salad's cruciferous vegetable, kale. Simple to make and easy to enjoy, this healthy salad is a great addition to any meal.

Kale is one of the many nutritious vegetables found in The Farm's CSA Farm Share.

(Serves 4)

Ingredients:

  • 1 Large bunch kale
  • 1 Medium/large apple of your choice
  • 1 Green pepper (optional)
  • 1/2 cup crumbled feta
  • Salt & pepper to taste

Dressing:

  • 1/2 cup canola (or other vegetable) oil
  • 1/4 cup apple cider vinegar
  • 1 teaspoon salt
  • 2 tablespoons honey
  • 1 tablespoons minced garlic

Directions:

  1. Make the dressing: combine oil, vinegar, salt, honey, and garlic. Shake then allow to sit for at least 10 minutes to let flavors combine.
  2. Prepare the kale leaves: rinse, remove thick middle stems and chop into strips.
  3. Chop apple and green pepper into bite­size pieces. Add to kale.
  4. Toss salad in dressing and enjoy!
